Keto Seafood Chowder

 

KETO SEAFOOD CHOWDER 

Ingredients:

  • 1 lb peeled deveined shrimp (roughly chopped) or firm white fish like cod/halibut, or  2 cans of drained clams, or mix of all (you can season the seafood with salt, paprika)

  • 4 slices bacon // Chorizo Sausage// Pancetta

  • 2 ½ - 3 cups chicken or shrimp stock

  • 1 1/2 cups heavy whipping cream (or switch with coconut cream)

  • 2 tbls butter

  • 1/4 cup finely chopped onion, 2-3 cloves garlic

  • 1 tsp pink salt

  • 1 tsp fresh ground black pepper

  • 1 tsp smoked paprika,  ½ teaspoon dried thyme

  • Optional: Celery, mushroom, spinach, parsley for garnish

  • Optional: 2 turnips in cubes (like potatoes)

  • Optional: Cheddar cheese/Parmesan/Swiss cheese

  • Xanthan gum to thicken ½- ¾ teaspoon

Instructions: 

In a large pot, cook bacon until crisp. Remove bacon, let cool, and crumbleAdd onion/garlic to pot with the bacon grease and cook until lightly sautéed
(other veggies can go now as well) add diced turnipsAdd chicken stock cook until veggies, turnips are tender (simmer 10-15 mins),
add seasoning salt, pepper, thyme, paprikaAdd shrimp/clams/fish (they cook in 4 mins!)Add heavy whipping cream, butter (add cheese now if using)Bring to a boil until mixture begins to thicken, add xantham gum at the endAdd crumbled bacon and enjoy!
